How to Make White Pepper From Black Pepper

We have all heard about White Pepper. Dont worry i too was unaware of this….. I thought that it was made from an entirely different plant. LOL!

Actually, white pepper is produced by removing the outer skin of red or green color berries which are soaked before they are dried. We take fully riped berries to make white pepper.

Here is the step by step procedure

1 – Take the fully grown Red or Green berries from Black pepper vines. Red ones are mostly preffered as its easy to remove the skin in red berries. You can also produce more red berries by giving a bit hot temperature to the vines when they are in the plant (you can use white plastic sheets that can be placed in the ground which reflects sunlight and produce heat to vines which makes more berries red)

2 Take a tub of water and soak this pepper berries in it for about 10 days. This helps to make it soak and makes the skin easily removable. As these are fully grown, its skin is ready to break with water making it wet, its becomes more easier.

3 Now take it out and remove the outer red skin that is already started coming out. removing the skin takes out some of the peperine compound, volatile oils and compounds that gives black pepper its aroma. This is the reason for the different flavour and heat component of white pepper than black pepper.
